Exotic Vegetable Pakoda Monsoon ka Mazza Episode 42 Sanjeev Kapoor Khazana

EXOTIC VEGETABLE PAKORA

Ingredients

1 medium tomato
medium green zucchini
medium yellow zucchini
1 medium long brinjal
1 cups gram flour (besan)
tsp turmeric powder
tsp carom seeds (ajwain)
Salt to taste
tsp roasted cumin (jeera) powder
tsp red chilli powder
Oil for deep-frying
Chaat masala powder for sprinkling
Tomato ketchup to serve

Method

1. Whisk together gram flour, turmeric powder, carom seeds, salt, cumin powder, chilli powder and water as required to a thick batter of coating consistency. Add baking soda and whisk again.
2. Slice tomato, green and yellow zucchini and brinjal.
3. Heat sufficient oil in a kadai. Dip vegetables, one by one, in the batter and deep-fry in hot oil till golden brown. Drain on absorbent paper.
4. Sprinkle some chaat masala powder on top and serve hot with tomato ketchup.
