EXOTIC VEGETABLE PAKORAIngredients1 medium tomato medium green zucchini medium yellow zucchini1 medium long brinjal1 cups gram flour (besan) tsp turmeric powder tsp carom seeds (ajwain)Salt to taste tsp roasted cumin (jeera) powder tsp red chilli powderOil for deep-frying Chaat masala powder for sprinklingTomato ketchup to serveMethod1. Whisk together gram flour, turmeric powder, carom seeds, salt, cumin powder, chilli powder and water as required to a thick batter of coating consistency. Add baking soda and whisk again. 2. Slice tomato, green and yellow zucchini and brinjal. 3. Heat sufficient oil in a kadai. Dip vegetables, one by one, in the batter and deep-fry in hot oil till golden brown. Drain on absorbent paper. 4. Sprinkle some chaat masala powder on top and serve hot with tomato ketchup.
