3 Types of Raita

Ingredients for Mix Vegetable Raita:
Nestl MilkPak Yogurt 1 pack
Black pepper powder 1/2 tbsp.
Salt 1/2 tsp
Onion (chopped) 1/2 cup
Cucumber (chopped) 1/2 cup
Tomatoes (chopped) 1/2 cup
Green chilies (chopped) 1 tbsp.

Ingredients for Kaddu ka Raita:
Water (for blanching) as required
Kaddu (shredded) 2 cups
Chilled water (for soaking) as required
Nestl MilkPak Yogurt 1 pack
Black pepper powder 1/2 tbsp.
Salt 1/2 tsp
Oil (for tarka) 3 tbsp.
Cumin seeds (for tarka) 1 tbsp.
Red whole button chilies (for tarka) 6-7
Chopped Garlic (for tarka) 1 tbsp.
Curry leaves (for tarka) 5-6

Ingredients for Boondi Raita:
Gram flour 2 cups
Salt 1/2 tsp
Water 1 cup
Oil 1 tbsp.
Nestl MilkPak Yogurt 1 pack
Cumin seeds 1/2 tbsp.
Chaat masala 1/2 tbsp.
Salt 1/2 tsp
Green coriander (chopped) 1/4 cup

Directions for Mix Vegetable Raita Preparation:
1. In a bowl add Nestl MilkPak Yogurt, black pepper powder, salt, onion, cucumber, tomatoes, and green chilies and mix it well. Your mix vegetable raita is ready.
Directions for Kaddu Ka Raita Preparation:
2. Take Kaddu and peel it well. Now shred it and boil for 5-10 mins.
3. Immediately transfer it to chilled water and dip for 2 seconds.
4. Now in a bowl add Nestl MilkPak Yogurt, black pepper powder, salt, blanched lauki and mix it well. Set aside.
5. For tarka preparation, in a pan heat oil and add garlic. Saut for a minute.
6. Now add cumin seeds, red whole button chilies, curry leaves and cook for a minute.
7. Pour this tarka over prepared kaddu raita and serve.
Directions for Boondi Raita Preparation:
8. For boondi preparation, in a bowl add gram flour, salt, water, oil and mix it well.
9. In a pot heat oil and pour the prepared batter over frying spatula strainer.
10. Small drop of gram flour mixture will fall into frying oil and fry them until boondi is crispy and golden.
11. Now in a bowl add Nestl MilkPak Yogurt, cumin seeds, chaat masala, salt, green coriander, prepared boondi and serve. Your Boodni Raita is ready.
