A healthy take on the classic Eggs Benedict.EGGS BENEDICTIngredients8 eggs 4 brown burger bunsExtra virgin olive oil for drizzlingSalt to taste½ tsp vinegar 1 avocado Juice of ½ lemon 1 medium onion, finely chopped 1 medium tomato, finely chopped 1 medium cucumber, peeled and finely chopped2 tbsps chopped fresh coriander leaves1 tsp lemon juiceCrushed black peppercorns to tasteMethod1. To make for one portion. Halve 1 burger bun, drizzle olive oil. Place the buns in an air fryer and cook at 180º C for 4-5 minutes. 2. Heat 2 cup water in a deep non-stick pan, add salt and bring it to a boil, add vinegar and mix well. Break 1 egg and place in center of the pan and let it poach. Similarly prepare the other poached eggs. 3. Halve avocado, scoop out the flesh of avocado and put into a bowl. Add juice of ½ lemon and mash with a fork.4. Transfer the prepared poached egg on a plate. 5. To make a salad, combine onion, tomato, cucumber, chopped coriander, salt, 1 tsp lemon juice and crushed peppercorns in another bowl and mix well. 6. Spread the avocado dip on the baked bun halves, place poached eggs on top, place prepared salad on the side of the platter and serve immediately.
