Eggplant Lasagna Easy Low Carb Lasagna Recipe

In this video I show you how easy eggplant lasagna really is. My no noodle low carb lasagna recipe uses sliced eggplant and zucchini instead of pasta thus making this dish low carb keto friendly without sacrificing flavour. Who really wants to eat healthy food that tastes like cardboard??? INGREDIENTS LIST

* 1 lb ground pork
* 1 onion
* 1 clove garlic
* 2 basil bombs (2 tbsp. basil)
* 1 tbsp. dried Greek oregano
* 28oz crushed tomatoes
* 14oz water
* 2 cups grated parmesan
* 500g grated mozzarella cheese
* 2 cups cottage cheese
* 2 eggplants
* 3 zucchini
* Salt & pepper to taste
