EGGLESS Lemon Cupcakes | LEMON CURD CUPCAKES | Eggless Lemon Curd Recipe | Best Bites

When life gives you lemons, make a big batch of lemon cupcakes!! These are one of my favourite cupcake recipes, I love the fluffy, moist crumb with& lemon curd filling & that lemony frosting. Each bite is perfect. They MELT IN YOUR MOUTH and just have an amazing lemon flavour I know you'll love.

INGREDIENTS:-

for cupcakes :-
Pain flour - 1 cup
Milk - 1/2 cup + 2 tbsp
powdered sugar- 1/2 cup + 2tbsp
Oil - 1/4 cup
baking powder - 1/2 tsp
Baking soda - 1/4 tsp
vinegar - 1 tsp
Vanilla essence - 1 tsp

for eggless lemon curd :-
1/2 cup lemon juice
2.5 tbsps cornstarch
3/4 cup milk
1/3 cup condensed milk
1/2 cup sugar
1/4 cup butter
few drops yellow gel colour or pinch of turmeric - OPTIONAL

For frosting :-
whipping cream - 3/4 cup
powdered sugar -2 tbsp
lemon juice -1 tbsp
