Christmas Special Eggless Plum Cake Recipe without Oven | Easy Plum Cake Recipe

This is the season of cheer, love and of course, a lot of desserts !

Plum Cake refers to a wide range of cakes made with either dried fruit (such as currants, raisins or prunes) or with fresh fruit. There is a wide range of popular plum cakes. Every country, region and family has a different version of the recipe. Some are made with nuts soaked in rum, some are fed with sherry or brandy for weeks after being baked, and some have no alcohol at all.

Loaded with dry fruits and enhanced with goodness of spices is this cake all about ! For this eggless plum cake, I have not used alcohol or rum instead, i have used the method of soaking the dry fruits with orange juice.

I have soaked the dry fruits and nuts in orange juice for 12 hours in fridge before using to bake. However, if you want you can soak for as little as 12 hours or 24 hours in the fridge. If kept outside even for a few hours in a warm climate like that of India, the juices will get spoiled.

The key process in the making of this plum cake is the time this cake spends in the baking. We cook this cake slowly at a lower temperature / low flame so that it becomes really flavorful and the texture comes out just right. A normal cake is cooked for 30 to 40 minutes while this cake is cooked for 70-80 minutes in kadhai/cooker or 50-55 minutes at 160 degrees temperature in an oven.

I have used my favorite dried fruits and nuts in this recipe, but feel free to substitute or add whatever you like for your Christmas cake!

{ Ingredients } :
~ For the cake
* ½ cup flavorless oil (120 ml)
* ¾ cup brown sugar (150 gm)
* 1 cup curd (240 ml)
* 1 teaspoon vanilla extract
* 1 + ½ cup maida (180 gms)
* 1/2 teaspoon cinnamon powder
* 1/2 teaspoon ginger powder
* 1/8 teaspoon clove powder
* 1/4 teaspoon nutmeg powder
* 1 teaspoon baking powder
* ½ teaspoon baking soda
* 1 teaspoon vinegar
* 2+1 tbsp almonds
* 2+1 tbsp walnuts
* 2+1 tbsp cashews

~ For soaking
* 1/2 cup tutti frutti (70 gm)
* ¼ cup raisins (35 gm)
* ¼ cup dried apricots (35 gm)
* ¼ cup dried cranberries (35 gm)
* ¼ cup prunes (35 gm)
* ¼ cup black raisins
* ¼ cup cherries
* 1 tablespoon orange zest
* 1/2 cup orange juice (120 ml)
