Egg Sauce

INGREDIENTS

4 medium eggs

4 medium tomatoes, chopped.

1 medium onion, diced.

3 red chilli, chopped.

4 cloves of garlic, minced.

2 tbsp vegetable oil

1 tsp salt



DIRECTION

Heat vegetable oil in a pan over medium heat, add diced onion, garlic, stir and let simmer for a minute.
Add chopped tomatoes, stir and let simmer for 2 minutes then add chopped chilli, stir and let simmer.
Adjust salt to your taste.
Whisk the eggs, pour into the tomato sauce and let simmer for 2 minutes, stir and let simmer for a minute.
Egg sauce ready to serve. Serve with fried plantain and toasted bread.
