Add chopped tomatoes, stir and let simmer for 2 minutes then add chopped chilli, stir and let simmer. Adjust salt to your taste. Whisk the eggs, pour into the tomato sauce and let simmer for 2 minutes, stir and let simmer for a minute. Egg sauce ready to serve. Serve with fried plantain and toasted bread.
