EGG SALAD SANDWICHIngredients4 eggs, hardboiled1 small carrot, grated1 medium green capsicum, finely chopped1-2 spring onion bulbs, finely chopped1-2 stalks spring onion greens, finely chopped16 brown bread slicesSalt to tasteCrushed black peppercorns to taste3 tablespoons green chutneyButter for spreading8-12 lollo rosso lettuce leavesTomato ketchup for servingMethod1. To prepare egg salad, finely chop hardboiled eggs and transfer in a bowl. 2. Add carrot, capsicum, spring onion bulbs, spring onion greens, salt, crushed peppercorns and green chutney to chopped eggs and mix well.3. Spread some butter on each bread slice.4.
