Egg being the wonderful source of proteins can be used to make many delicious dishes. Try out this amazing dish of Egg curry. EGG CURRY Ingredients4 eggs, hardboiled and peeled3 tablespoons oil½ teaspoon cumin seeds¼ teaspoon green cardamom seeds3-4 cloves1 bay leaf1 inch cinnamon4-5 garlic cloves1 medium onion, roughly chopped½ inch ginger, roughly chopped¼ teaspoon turmeric powder½ teaspoon red chilli powder2 medium tomatoes, roughly chopped Salt to taste 1½ tablespoons chopped fresh coriander leaves 2 medium onions, finely choppedA pinch garam masala powder Fresh coriander sprigs for garnishing Method1. Heat 1 tablespoon oil in a non-stick pan. Add cumin seeds, cardamom seeds, cloves, bay leaf and cinnamon. Sauté for 30 seconds.2. Add garlic, roughly chopped onion and ginger, sauté till onion turns golden brown. Add turmeric powder, chilli powder and mix. 3. Add tomatoes and salt and mix well. Add 1 tablespoon coriander leaves, mix, cover and cook till the tomatoes turn soft. Transfer on a plate and set aside to cool. 4. Heat 1 tablespoon oil in the same pan. Add eggs, sprinkle some salt on them and fry till lightly browned from all sides. Set aside. 5. Heat remaining oil in another non-stick pan. Add finely chopped onions and sauté till golden brown.6. Discard the bay leaf from the sautéed mixture and blend with some water to a fine paste. 7. Add the prepared paste and ½ cup water to the pan, mix and cook for a minute. Add fried eggs, cover and bring to a boil. Adjust water as required. 8. Add garam masala powder and remaining coriander leaves, cover and simmer for 10 minutes.9.
