A quick and easy breakfast recipe, perfect for a lazy Sunday.

EGG BOAT

Ingredients

4 eggs
4 brown bread slices
Oil to shallow fry
Salt to taste
Crushed black peppercorns to taste
4 tsps cream cheese
10-12 cherry tomatoes

Method

1. Cut roundels from the bread slices with the help of a cookie cutter. Toast the roundels and the edges in a nonstick pan till golden brown. Set aside.
2. Break eggs in a bowl one at a time.
3. Heat oil in a nonstick pan. Place one bread slice with a cavity in the centre and add egg white in the cavity.
4. Place the yolk carefully over whites. Sprinkle salt, crushed peppercorns, cover and cook for 2 minutes or till the egg yolk is firm.
5. Apply cream cheese over toasted bread roundels.
6. Add some cherry tomatoes in the pan in which egg is cooking, cover and continue to cook for 2-3 minutes.
7. Transfer all the components on serving plate and serve immediately.
