Vegetable Kurma / White Kurma / Vellai Kurma is an excellent sidedish / gravy for chapathi or idli or parotta or poori or ghee rice. This is a Hotel style veg kurma which incorporates all the goodness of vegetables into a tasty creamy curry with coconut paste. The addition of nuts and coconut paste adds richness to the veg kurma while mellowing the taste. This results in a smooth and delicious kurma which is not spicy. The addition of whole garam masala spices adds to the aroma of the vellai kurma. And We can add any vegetable of choice to this tasty vegetable curry and have a healthy intake of vitamins and minerals.INGREDIENTS & INSTRUCTIONTo a mixer jar, add :-* Fresh coconut (grated) - 1 cup* Green chilli - 2 nos.* Cashews - 10 nos.* Ginger - 2 inch.* Garlic - 6 nos.* Poppy seeds - 2 tsp* Coriander seeds -1 tsp* Cumin seeds - 1 tsp* Water - 1/2 cupBlend to smooth paste and keep aside.To a pan, add :-* Oil /Ghee / Clarified Butter - 1 tbsp* Bay leaf - 1 large no* Cinnamon (Dalchini) - 2* Green Cardamom (Elaichi) - 2 nos.* Cloves (laung) - 3 nos.Saut until they turn aromatic,* Onion (finely chopped) - 2 medium sizedSaut well for about 2 minutes,* Tomato (finely chopped) - 1 medium sizedMix well, saut until tomatoes turn soft and mushy,* Green Peas - 1/2 cup* Carrot (chopped) - 1/2 cup* Potato (Chopped) - 1/2 cup* Green Beans (chopped) - 1/2 cupMix the veggies very well and saute for a minute,* Salt - 1 & 1/2 tsp or as per tasteMix well,* Water - 3/4 cupMix very well, cover and cook 10 minutes at medium flame,Veggies should be cooked well, now add the grinded white masala paste,add little water to mixer jar and adjust consistency as required.Gently mix well until raw flavours disappear. Let it cook for 2 minutes making sure the flavors are well absorbed.* Coriander leaves (finely chopped) - 1/4 cupGently mix well and turn off the flame after a minute.Enjoy this tasty white kurma with Chapati or Roti or Parota or Poori.Also tastes good when served with Ghee rice as well as Dosa.Friends, please try this white kurma at home and serve it with chapathi.
