Easy Homemade Egg Salad for a Quick Healthy Lunch

Healthy, delicious egg salad is super simple with this technique. Great way to get kids involved in the kitchen prepping lunch!

This recipe is a keto diet-friendly lunch idea the whole family will enjoy!

You will need:

* hard-boiled eggs
* yellow mustard
* mayo (high quality like Primal Kitchen from Thrive Market https://www.kitchenstewardship.com/thrivemarket or homemade https://www.kitchenstewardship.com/homemade-mayo/ )
* salt and pepper

For each egg, we use about a 1/2 tablespoon of mayo and 1/2 teaspoon of mustard (maybe?) but I never measure so it's all a bit fluid! Salt and pepper to taste and eat with crackers, red pepper or cucumber slides, or with a fork! Enjoy!
