EASY HOMEMADE 'COLESLAW' RECIPE

In this episode, I'd like to share with you my version of 'Coleslaw' recipe. We can't get enough of this salad, it is very easy to prepare and goes great as a side dish in so many meals. Best served the day it's made, but I also like this coleslaw the next day. If you are a coleslaw lover just like me, give this recipe a try!

INGREDIENTS (serves 5-6)
1 small head (1 kg/2 pounds) cabbage (green or red)
2-3 (1/2 kg/1 pound) carrots
1/2 onion

Dressing:
1/2 cup mayonnaise
1/2 cup whole milk
1/2 tsp mustard
2 tbsp fresh lemon juice
2 tbsp honey
Salt&White pepper

DIRECTIONS
For dressing: Combine mayonnaise and milk in a big bowl.
Mix and beat.
Add 1/2 tsp mustard, 2 tbsp lemon juice.
Add 2 tbsp or to taste honey.
Sprinkle 1/2 tsp or to taste salt and a pinch of pepper.
Beat again, set aside.
Chop onion finely, then rub with a pinch of salt, set aside.
Remove the outer leaves of the cabbage.
You can rinse those leaves and use them in the salad, if not wilted or damaged.
Using a knife, make some cuts where leaves attached to the core.
Then cut and remove the entire core from the head and cut into chunks.
Rinse and drain.
Peel and wash carrots, discard the stems.
Cut into chunks.
In food processer or blender process cabbage and carrots, in batches.
Until the pieces are about the size and shape of rice.
Transfer into the bowl and toss to combine with dressing.
Repeat the same until all is done.
Rinse and drain onion, add into the bowl, toss to combine making sure all the veggies are coated evenly.
If coleslaw seems too dry, add a little more mayonnaise and milk.
As it sits the liquid is released from the cabbage, so don't make it overly wet.
Taste the coleslaw and add more salt, honey or lemon juice to taste.
Smooth the surface with a spatula.
Clean the rim of the bowl with paper towels.
Garnish as desired for serving, I usually use fresh parsley.
Cover the bowl and refrigerate for at least 3-4 hours.
Make sure to toss each time before you serve it.
