EASY GRATIN RECIPE - For Vegetables, Pasta or Bulgur

In this episode, I'd like to share with you my version of gratin recipe. We simply love it, the dish is so delicious and easy to prepare. This time I used broccoli and cauliflower but you can use other ingredients that you like. Such as carrots, potatoes, beans, zucchinis, brussel sprouts, pasta or even bulgur (for its low GI) etc. You can also don't bake it and serve immediately, it tastes amazing too!

INGREDIENTS FOR THE SAUCE:
2 real tablespoonful butter
2 real tablespoonful flour
2 cups cold milk
1 egg yolk
1/2 tsp mustard
A pinch of freshly grated nutmeg
125 gr. (1 1/2 cup) grated cheese
(any cheese that melts and you like)
Sweet paprika
Olive oil
Salt
White pepper (or black pepper)

DIRECTIONS
You can use the sauce with 1/2 package (250 gr.) cooked pasta.
You can use the sauce with 1 1/2 cups of bulgur- after cooking
in salty-boiling water for about 15 minutes.
For the veggie version, transfer the chopped veggies into a pan.
Cover with cold water add salt, garlic, black pepper, bring to a boil and simmer for about 5 minutes, then rinse.
For baking option: preheat oven to 200 C (400 F) and lightly grease a baking dish.
(I use a 22x17 cm. 9x7 inches baking dish)
Sprinkle 3-4 tbsp grated cheese on bottom of a baking dish, set aside.
For the Gratin sauce: melt butter in a large pan, over medium heat.
Add flour and cook for about 2-3 minutes, stirring constantly.
Add the cold milk gradually, keep stirring.
Even better to beat, using a wire whisk.
Make sure to scrape the edges of the pan.
After adding all of the milk, cook for another 1-2 minutes then reduce heat to medium low.
Add mustard and egg yolk then beat.
Add 1 tsp or to taste salt, mix.
Sprinkle a pinch of pepper, mix.
Add a tiny pinch of nutmeg.
Reserve 1/3 of the grated cheese for the top then add the remaining cheese into the sauce.
Turn off the heat and mix until the cheese melts.
Transfer the veggies (or cooked pasta, or cooked bulgur) into the
pan and stir until combined.
You can serve it immediately, if desired.
To continue for baking: transfer the mixture into prepared baking dish.
Spread into corners and flatten the surface.
Sprinkle some sweet paprika then the cheese over the top.
Bake for 25-30 minutes or until the top is browned.
Let cool for about 5 minutes, loosen the edges with a spatula.
Then slice into desired portions, transfer into a serving plate and
serve hot.
