EASY FRESH ANCHOVY PIE RECIPE - Hamsili Brek

In this episode, I'd like to share with you 'Hamsili Brek' recipe. It is so easy to make and tastes amazing. I use fresh anchovies, and the only time consuming part of this recipe is to clean them. But cleaning fresh anchovies is easy, or you may also use any thin fish fillets instead. I added a few more ingredients but thanks to aunt Fikriye for this amazing recipe! Hope you give it a try!

INGREDIENTS
1 kg. (2.2 pounds) fresh anchovies
(700 gr. (1.5 pounds) when deboned)
4 eggs
3 real tablespoonful corn flour (yellow)
1 cup chopped green onions
1 cup chopped fresh parsley and dill
1/2 tsp baking soda
1 lemon
Salt & pepper
Olive oil
Sesame seeds (optional)

DIRECTIONS
Before cleaning anchovies, rub your hands with some lemon juice or work with gloves, to eliminate smelly hands.
Take an anchovy and hold it with one hand, belly facing up.
Using your other hand, pull the head off downwards at a diagonal angle.
With your thumb, gently open the two sides of the fish up, remove the innards and discard.
Gently pull the bone and the tail out in one long piece, starting at the middle.
Transfer into a large bowl and repeat the same, untill all the anchovies have been cleaned.
Fill the bowl with water, mix then drain.
Repeat this process for at least 5-6 times, or until the water is clear.
Preheat oven to 180C/360F.
Cut cleaned anchovies into 2-3 pieces.
Add zest of a lemon, then juice of a half a lemon on top.
Drizzle with 1-2 tbsp olive oil.
Sprinkle a pinch of black pepper and salt, mix gently then set aside until needed.
Beat 4 eggs in a big bowl.
Drizzle with 2-3 tbsp olive oil.
Add 1 tsp or to taste salt, and a pinch of black pepper.
Add 3 real tablespoonful corn flour, beat well.
Add 1/2 tsp baking soda, beat.
Stir in chopped greens.
Add anchovies and mix gently.
You can also add some chopped capia pepper for its colour, if desired.
Grease the bottom and sides of a medium-sized baking dish generously with olive oil.
I use a 28x18 cm. (11x7 inches) dish.
Transfer batter into the dish, smooth the top.
Drizzle with 1-2 tbsp olive oil, spread using your hands.
Sprinkle some sesame seeds if desired.
Bake for 35 minutes.
Then transfer 'Hamsili Brek' to the upper rack of your oven and broil for 5 minutes.
Once baked remove from the oven and let cool for 5 minutes.
Using a sharp knife loosen the edges, then slice.
With a spatula, transfer into a serving plate and serve hot.
If not serving immediately, make sure to let cool over a wire rack.
