Recipe:
1.5 teaspoon instant yeast
1 cup room temperature milk (I used unsweetened cashew)
1 tablespoon sugar
1 teaspoon salt
2 1/4 cup unbleached flour

Stir the yeast, sugar, and milk together. Set aside for 10 minutes.
Stir the salt into the flour.
Combine the wet and dry ingredients.
Knead/mix the dough for about 15 minutes. When the dough comes together in a smooth lump, it's ready to rest.
Cover the dough for a minimum of 1 hour (the longer the better). I proofed mine for 3 hours today.
Split the dough as desired and work each piece with well greased hands. I made six 5" breads.
In a well greased pan, cook until bubbles float to the surface and the bread gets golden brown. Flip and do the same on the other side.
Optional: brush with garlic butter and sprinkle with herbs.
