Easy Creamy Tomato Shrimp Angel Hair Pasta

Ingredients

1 pound angel hair pasta
2 tablespoons butter
4 cloves garlic crushed
1 pound shrimp peeled and deveined
1 (15 ounce) can fire roasted diced tomatoes undrained
2 teaspoons Italian seasoning
1 teaspoon salt or to taste
1 teaspoon crushed red pepper flakes
1/2 to 1 cup heavy cream
2 tablespoons chopped fresh parsley

Instructions

1 Cook the pasta according to package instructions.

2 In a saucepan, melt the butter over medium-high heat. Add the garlic and shrimp, stirring continuously until the shrimp are pink and cooked through. Remove the shrimp from the pan and set aside.

3 In the same pan, add the diced tomatoes, Italian seasoning, salt, and red pepper flakes. Bring the mixture to a simmer.

4 Stir in the heavy cream and heat through for 1 to 2 minutes.

5 Add the cooked pasta to the sauce and toss to coat. Add the shrimp back to the pan and garnish with chopped fresh parsley. Serve immediately.


Recipe Notes:
For a creamier dish, use the full amount of cream.
