SUNDAY MUTTON CURRY
Preparation time 10 minutes
Cooking time 40-45 minutes
Serve 2-4

Ingredients
For Paste
3 large Onions, sliced,
2 tbsp Coriander seeds,
1 tsp Cumin seeds,
2 no. Cloves,
1 no. Black cardamom,
2-3 no. Green cardamom,
1 inch Cinnamon stick,
1 tsp Turmeric powder,
1 tsp Degi red chilli powder,
Salt to taste,
1 inch Ginger, peeled & sliced,
4-5 no. Garlic cloves,
2-3 no. Green chillies,
2-3 tbsp Oil,
10-12 no. Black peppercorns,
few Tender Coriander stem,

For Mutton Marination
1 kg Mutton, with bones,
Salt to taste,
1 tsp Ginger Garlic paste,
tsp Black peppercorns, crushed,

For Mutton Curry
2-4 tbsp Oil,
2 no. Dry red chillies,
2-3 no. Cloves,
Marinated Mutton,
Prepared Paste,
2 tbsp Mustard oil,
1 cups Curd, beaten,
1 tbsp Coriander leaves, chopped,

For Pressure Cooking Mutton
1 cup Water,
Salt to taste,
Cooked Mutton,
1 tbsp Prepared Sunday Masala,
1 tbsp Coriander leaves, chopped,

For Sunday Masala
1 tbsp Black peppercorns,
5-6 no. Black cardamom,
2-4 no. Green cardamom,
2-3 no. Cloves,
2 no. Mace,
1 tsp Dry fenugreek leaves,
Salt to taste,

For Garnish
Coriander sprig,


Process
For Paste
In a bowl, add onions, coriander seeds, cumin seeds, cloves, black cardamom, green cardamom, cinnamon stick, turmeric powder, degi red chili powder, salt to taste, ginger, garlic, green chili, oil, black peppercorns and coriander stems.
Transfer it into a mixer grinder jar and grind into a smooth fine paste.
Keep it aside for further use.

For Marination
In a bowl, add mutton, salt to taste, ginger garlic paste, black peppercorns and mix it well.
Keep it aside for further use.

For Mutton Curry
In a handi, heat oil, add dry red chilies, cloves and let it splutter.
Add marinated mutton and saute it for 5-6 minutes on medium flame.
Add prepared paste and saute it for a few minutes.
add mustard oil, curd and simmer it for a while until cooked well.
Add coriander leaves and mix it well.
Keep it aside for further use.

For Cooking In Cooker
In a pressure cooker, add water, salt to taste and get a quick boil.
Add cooked mutton and cover it with a lid and cook it for 2-3 whistles on high flame.
Add prepared masala and simmer for 4-5 minutes, add coriander leaves and mix it well.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.

For Masala
In a plate, add black peppercorns, black cardamom, green cardamom, cloves, mace, dry fenugreek leaves, salt to taste and dry roast it for a minute.
Transfer it into a mixer grinder jar and grind into smooth fine powder.
Keep it aside for further use.
