Ingredients/Method
2 cups left over rice
2 cups chopped veggies of choice- we had carrots, beans, peas, corn
salt and pepper per taste
2 eggs
Oil for cooking
Green onions for garnish
1/2 cup chopped onions
2 tbsp soy sauce.

- Fry onions in hot oil and then add veggies. Add salt and pepper. Continue to saute. Crack in two eggs and break the eggs. Then mix in rice and combine all ingredients together. Cook further for 3-4 mins. Add soy sauce. Mix well. Garnish with green onions and serve.
