EASY 'APPLE CAKE IN A STIR FRY PAN' RECIPE I Super tender and delicious

In this episode, I'd like to share with you my easy 'Apple Cake In A Pan' recipe. If you don't have an oven, or don't feel like turning it on, then this recipe is just for you. Basically, all you need is a non-stick pan and a wire whisk. It is so easy to make and tastes amazingly delicious. I really hope you give this recipe a try!

INGREDIENTS
2 sweet apples
3 large eggs (at room temp)
2 cups flour
3/4 cup sugar + 2 tbsp for the pan
3/4 cup milk (at room temp)
1/2 cup oil (butter + sunflower oil) + plus some butter to grease the pan
1 pack (1 tbsp) baking powder
1 pack (1 tbsp) vanilla sugar
A pinch of salt
Zest of 1/2 lemon
1 leveled tsp ground cinnamon
For topping: icing sugar

*I use a 200 ml. glass for measuring

DIRECTIONS
I use a 26 cm. (10 inches) non-stick pan for this recipe.
*If using a different size, height of your cake and cooking time may vary.
Generously grease the bottom and the sides of the pan with cold butter.
Sprinkle 1 tbsp granulated sugar and shake the pan to spread.
Measure 2 cups spooned and leveled flour.
Sift the flour, baking powder, vanilla sugar, salt and cinnamon into a bowl.
Mix dry ingredients with a spoon, set aside until needed.
Transfer 3/4 cup sugar into a large bowl.
Add zest of 1/2 lemon, making sure to grate yellow parts only, then mix with a spoon.
Add the eggs, beat well with a wire whisk.
Melt 3 tbsp butter.
Measure it, then add some sunflower oil on top, to reach 1/2 cup in total.
Add milk and oil mixture on top of wet ingredients, beat.
Add dry ingredients on top of wets, by sifting one more time.
Beat until just combined, making sure not to over mix.
Scrape the bottom and the sides of the bowl with a spatula.
Cut one of the apples into quarters, peel, remove and discard the seeds.
Slice thinly and arrange in a single layer, at the bottom of the pan.
Pour the cake batter on top.
Peel and slice the other apple, arrange slices on top of cake batter, in a single layer.
Gently shake the pan and tap to the counter for 1-2 times, to get rid of large air bubbles.
Place the pan over the lowest possible setting of a medium-size burner of your gas stove.
Cover and cook for 30 minutes, or until the top is really solid.
Check the top for doneness, loosen the edges with a spatula.
Then cover the pan with a large cutting board.
Carefully turn the cake upside down.
Wipe the pan with some paper towels.
Grease it with some butter, about 1 tsp.
Sprinkle 1 tbsp granulated sugar, as evely as possible.
Transfer the cake back to the pan with a spatula, uncooked side down obviously :)
Cover and cook for 10 minutes.
Gently check the bottom for doneness.
Cover and cook in 2-minute intervals if needed, then turn off the heat.
It took me 12 minutes to cook the other side.
Cover the pan with cutting board and turn the cake upside down, one more time.
Carefully slide to a wire rack and let cool completely.
Sift some icing sugar on top.
Slice then enjoy, it is a super tender and delicious cake.
