Fried chicken cubes cooked in spicy chilli sauce with capsicum. DRY CHILLI CHICKENIngredients1 teaspoon red chilli powder2-3 green chillies, halved and slit400 grams boneless chicken, cut into cubesSalt to tasteCrushed black peppercorns to taste1 tablespoon ginger-garlic paste1 tablespoon oil + for deep-frying¼ cup refined flour¼ cup + 1 tablespoon cornflour 1 tablespoon chopped garlic1 medium onion, cut into cubes1½ medium green capsicum, cut into cubes1 tablespoon tomato ketchup2 tablespoons soy sauce1 inch ginger, cut into thin strips 1-2 stalks spring onion greens, choppedCooked vegetable noodles for servingMethod1. Take chicken cubes in a bowl. Add salt, crushed peppercorns and ginger-garlic paste and mix well. 2. Heat sufficient oil in a pan. 3. Take refined flour in a bowl. Add ¼ cup cornflour and some water and whisk well to make a semi-thick slurry.4. Dip marinated chicken cubes to the slurry, drop in hot oil and deep-fry till golden and crisp. Drain on absorbent paper. 5. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté on high heat for 30 seconds. 6. Add capsicum and mix. Add fried chicken cubes and mix. Add tomato ketchup, soy sauce, salt, crushed peppercorns and chilli powder and mix well.7. Add green chillies and ginger strips and mix. 8. Take remaining cornflour in another bowl. Add some water and mix well to make a smooth slurry.9. Add slurry to chicken mixture, mix and cook till it thickens. Add spring onion greens, switch off heat and mix. 10. Put some vegetable noodles in a serving platter.
