These rolls are stuffed with a delicious chicken mixture and fried till crisp. They make for the perfect appetizer in any party or occasion!DRAGON CHICKEN ROLLSIngredients200 grams boneless chicken breasts, cut into thin strips8-10 spring roll sheets2 tbsps oil + for deep frying 1 tbsp finely chopped garlic½ tbsp finely chopped ginger1 green chilli, finely choppedSalt to tasteCrushed black peppercorns to tasteA pinch of red chilli powder½ cup chopped mixed coloured capsicums2 tbsps chopped cashew nuts1½ tbsps tomato ketchup½ tsp dark soy sauce½ tsp vinegar¼ cup refined flour (maida)2 tbsps corn flourHoney-chilli dip to serveMethod1. Heat oil in a non-stick pan. Add garlic, ginger and green chilli and sauté for 30 seconds. 2. Add chicken and sauté on high heat for 3-4 minutes. 3. Add salt, crushed black peppercorns, red chilli powder, mixed coloured capsicums, cashew nuts, tomato ketchup, and dark soy sauce and mix well. Cook for 1-2 minutes. 4. Add vinegar, mix and switch the heat off. Allow the mixture to cool to room temperature.5. To make the slurry, take refined flour in a bowl. Add corn flour and ⅓ cup water and mix till a smooth batter is formed. 6. To make the roll, take 2 spring roll sheet one top of the other, brush the prepared slurry on the sides. Place a portion of the chicken mixture on one side of the sheet. Fold the sides and apply some slurry on top and tightly roll.7. Heat sufficient oil in a kadai. Gently slide in the rolls a few at a time and deep fry till golden brown and crisp. Drain on absorbent paper.8.
