Dosa Waffle Sandwich | Sanjeev Kapoor Khazana

Who knew dosas would taste so good like this!

DOSA WAFFLE SANDWICH

Ingredients

2 cups readymade dosa batter
2 tbsps oil
½ tsp mustard seeds
¼ tsp asafoetida (hing)
1 tsp split skinless black gram (dhuli urad dal )
1½ tsps split Bengal gram (chana dal)
2 green chillies, finely chopped
6-8 curry leaves
1 large onion, sliced
½ tsp turmeric powder
3 medium potatoes, boiled and peeled
Salt to taste
3 tbsps chopped fresh coriander + for garnish

Method

1. Heat oil in non-stick pan. Add mustard seeds, hing, urad dal, chana dal and sauté for 30-40 seconds.
2. Add green chillies, curry leaves, onions and cook till the onions are translucent.
3. Add turmeric powder and mix well. Crush the boiled potatoes lightly and add to the pan.
4. Add salt and mix well. Sprinkle little water, cover and cook on low heat for 4-5 minutes. Add 2 tbsps chopped coriander and mix well.
5. Add salt, remaining chopped coriander and mix well.
6. Preheat a waffle iron and spread a ladleful of batter. Close the lid and cook for 5-6 minutes. Cut the waffle into quarters.
7. Arrange 2 pieces of waffles on the serving plate and top up with a generous portion of potato mixture. Cover with remaining pieces of waffle.
8. Sprinkle coriander on top and serve hot with coconut chutney, sambhar and tomato chutney.
