Donut | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

Donuts are the ultimate indulgence - here is how you can make them slightly healthier.

DONUT

Ingredients

1 cup refined flour + for dusting
1½ tablespoons fresh yeast
A pinch + 2 teaspoons castor sugar
½ cup oats powder
½ cup almond powder
A pinch of salt
Milk as required
50 grams butter + for brushing
Honey for drizzling
Edible colourful sprinklers

Method

1. Take yeast in a microwave proof bowl. Add a pinch of castor sugar and 2-3 tablespoons warm water and mix. Place the bowl in the microwave and heat for 5 seconds. Set aside to activate.
2. Sieve together flour and oats powder in another bowl. Add almond powder and mix. Add remaining castor sugar and salt and mix well.
3. Make cavity in the center of the flour mixture, add activated yeast and mix. Add some milk and knead into soft dough. Transfer on the worktop and knead well.
4. Add butter to the dough and knead into soft dough, dusting with some flour. Transfer in another bowl, cover with a cling film and set aside to prove for 10-15 minutes.
5. Transfer the proven dough onto the worktop, dust some flour and roll into a thick sheet. Cut into donut shape using a donut cutter and discard the center of the donuts.
6. Preheat oven to 180º C.
7. Place the donuts on a baking tray, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
8. Put the tray into the preheated oven and bake for 15-20 minutes.
9. Brush some butter, drizzle some honey and sprinkle some colourful sprinklers on top.
10. Serve.
