DIMER DALNA

Ingredients

4 eggs hard boiled and peeled
1 large potato, boiled and peeled
3 tbsps oil
2 bay leaves
2 inch cinnamon sticks
3 green cardamoms
4-5 peppercorns
2-3 cloves
1 tsp cumin seeds
1½ tsps ginger- garlic paste
½ cup raw onion paste
A pinch of cumin powder
A pinch of coriander powder
½ tsp turmeric powder
½ tsp red chilli powder
1 cup tomato puree
Salt to taste
A pinch of sugar
2-3 green chillies, finely chopped
Chopped fresh coriander for garnish

Method

1. Heat a non-stick kadai.
2. Cut potato into 8 pieces. Add 2 tbsps oil in kadai, and add potato and fry on high heat till golden brown.
3. Make small slits on the eggs without cutting through. Set aside.
4. Remove fried potato in a bowl. Set aside.
5. Add eggs in pan and fry till golden brown, add salt. Remove and set aside.
6. Heat remaining oil in the same kadai, add bay leaves, cinnamon, green cardamom, peppercorns and cloves. Sauté on medium heat till fragrant.
7. Add cumin seeds and sauté till fragrant. Add ginger garlic paste and mix well. Sauté for a second, add onion paste and mix. Cook on high heat for 2-3 minutes till oil separates from mixture.
8. Add cumin powder, coriander powder, turmeric powder and red chilli powder. Mix well. Cook on low heat for 2 minutes.
9. Add tomato puree and mix well. Add little water and cook on medium heat for 2 minutes.
10. Add salt, sugar and mix well. Cook for 3-4 minutes on medium heat. Add fried eggs, potatoes and mix well. Cook for 2 minutes. Add chopped green chillies and cook on high heat for 2 minutes.
11. Transfer egg gravy in a serving bowl.
12. Serve hot garnished with chopped coriander/
