Our all-time favourite, Aloo Sabzi made a little spicier and flavoursome by cooking it just like it’s prepared in desi Dhabas.

DHABA STYLE ALOO SABZI

Ingredients

5 tbsps mustard oil
3 medium potatoes, parboiled and cut into 1 inch pieces
3 small onion, cut into quarters
3-4 green chillies
1 tsp cumin seeds
1 tsp mustard seeds
½ tsp asafortida
1 bay leaf
½ inch cinnamon stick
1-2 cloves
1 dried red chilli
1 medium onion, finely chopped
5-6 garlic cloves, chopped
1 medium tomato, finely chopped
Salt to taste
½ tsp Tata Sampann Turmeric Powder
½ tbsp coriander powder
1½ tsps red chilli powder
1 tbsp freshly chopped coriander leaves


Method

1. Heat 3 tbsps mustard oil in a non-stick pan, let it smoke. Add potatoes and sauté for 1 minute.
2. Add onion, green chillies and sauté well. Cook for 2-3 minutes, sautéing occasionally. Transfer them into a bowl and set aside.
3. Heat remaining mustard oil in the same non-stick pan, let it smoke. Add cumin seeds, mustard seeds, asafoetida, bay leaf, cinnamon stick, cloves and dried red chilli. Sauté till fragrant.
4. Add onion, garlic and mix well. Cook till golden brown. Add tomato, sauté well and cook till pulpy.
5. Add salt, Tata Sampann Turmeric Powder, coriander powder, red chilli powder and mix well. Add ¼ cup water, cover and cook for 3-4 minutes.
6. Add the potato mixture and mix. Add chopped coriander and mix well. Cover and cook for 1-2 minutes. Take it off the heat and transfer into a serving bowl.
7. Garnish with coriander sprig and serve hot.
