Onions, tomatoes, potatoes and spinach, cooked in aromatic and flavourful spices, This Aloo Palak recipe is definitely going to be a family favourite.

DHABA STYLE ALOO PALAK

Ingredients

1 large bunch of spinach leaves
2-3 medium potatoes, unpeeled and cut into quarters
2 tsps oil
1 tsp cumin seeds
1-2 green chillies, chopped
1 medium onion, chopped
1 inch ginger, finely chopped
1 tsp finely chopped garlic
1 large tomato, finely chopped
Salt to taste
¼ tsp turmeric powder
¾ tsp red chilli powder
½ tsp cumin powder
½ tsp coriander powder
½ tsp Tata Sampann Garam Masala
Ginger strips for garnish
Parantha to serve

Method

1. Heat sufficient water in a deep pan, add spinach leaves and blanch for 1-2 minutes and drain them into ice cold water. Gently squeeze the excess water and set aside.
2. Transfer the spinach into a blender jar, add ¼ cup water and blend to a fine paste. Set aside.
3. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add green chillies, onion, ginger and garlic. Sauté till onion turns translucent.
4. Add tomato and mix well. Add potatoes and sauté. Add salt and sauté for 1 minute. Cover and cook till the potatoes are cooked completely.
5. Add turmeric powder, red chilli powder, cumin powder and coriander powder. Add Tata Sampann Garam Masala and mix well.
6. Add the prepared spinach paste, ½ cup water and mix well. Cover and cook for 4-5 minutes.
7. Adjust salt, mix and take the pan off the heat. Transfer into a serving bowl, garnish with ginger strips and serve hot with parantha.
