In this Desi Thali recipe, let us learn how to make the authentic Indian meal at home. To create a perfectly balanced meal, a platter is made of different dishes which is called a 'thali'. Each bowl in a thali contains a different dish, from vegetables and lentils to raita. The idea of a thali is to have a balanced meal from a nutritional perspective. With a thali, each of the food groups is always presented (carbohydrates, protein, milk and dairy, fruit and veg, fats and sugars). For the Koftas
500 gms Mutton Mince
5 Green Cardamom Pods
2 Black Cardamom Pods
1/4 tsp Cinnamon Powder
1 tsp Red Chilli Powder
1 tsp Ginger Paste
1 tsp Fennel Seed Powder
1 tsp Cumin Seed Powder
Salt (as required)
1 Whole Egg
Dried Plums (chopped)

Frying the Koftas
1 tbsp Ghee

Gravy for the Koftas
2 tbsp Oil
1 Bay Leaf
1 & 1/2-inch Cinnamon Stick
4 Green Cardamoms
1 cup Onion Paste
1 tsp Ginger Paste
1 tsp Garlic Paste
1 tsp Fennel Seed Powder
1 tsp Cumin Seed Powder
2 tsp Red Chilli Powder
1 & 1/2 cup Yogurt (whipped)
1/2 cup Water
Salt (as required)
1/2 cup Water

Cauliflower & Peas Sabzi
2 tbsp Oil
1-inch Cinnamon Stick
3 Cloves
2 Green Cardamoms
1 tsp Mustard Seeds
5 Green Chillies (slit)
500 gms Cauliflower (chopped)
500 gms Green Peas
1/2 tsp Turmeric Powder
Salt (as required)
