A simple, quick & easy desi-style stir-fry for your lazy weeknight dinners. Vegetarians, you should definitely try it!

DESI STIR FRY

Ingredients

7-8 button mushrooms, cut into halves
3-4 spring onion bulbs, cut into quarters
1 small carrot, peeled cut into triangles and boiled
7-8 baby corns, cut into quarters and blanched
10-12 cauliflower florets, blanched
7-8 French beans, cut diagonally and blanched
2 small green capsicums, cut into triangles
1 tbsp ghee
1 tsp cumin seeds
A pinch of asafoetida
1 tsp Tata Sampann Garam Masala
Salt to taste
½ lemon
Spring onion greens for garnish

Method

1. Heat ghee in a nonstick wok, add cumin seeds once it changes colour add asafoetida and button mushrooms. Cook for 2-3 minutes.
2. Add spring onion bulbs, carrots, baby corn, cauliflower, French beans and green capsicum, toss well.
3. Add Tata Sampann Garam Masala and salt. Toss well and squeeze lemon juice and mix well.
4. Serve hot garnished with spring onion greens.
