Palak PanCakes

Ingredients for blanching:
Palak 2 cups
Water as required

Ingredients for palak mixture:
Boiled palak 2 cups
Yellow lentil (soaked) 2 cups
Ginger cloves 3-4
Green chilies 3
Water 1 cup

Ingredients for chicken cheese mixture:
Onion (chopped) 1 cup
Tomatoes (chopped) 1 cup
Sweet corn 1/2 cup
Boiled chicken (shredded) 1/2 cup
Red chili powder 1 tbsp
Chaat masala 1 tbsp
Salt 1 tsp
White pepper powder 1/2 tsp
Black pepper powder 1/2 tsp
Cheddar cheese 1 cup

Ingredients Palak Cake:
Palak Mixture as required
Chicken cheese mixture
Oil 3 tbsp

Ingredients for mayo sauce:
Tabasco sauce 3 tbsp
Sriracha sauce 1/4 cup
Mustard paste 1 tbsp

Direction for palak mixture:
1- In a pot heat water and bring it to a boil. Add spinach and blanch for 1-2 minutes. Remove from hot water and transfer it into chilled water. Soak them for 1-2 minutes.
2- Now stain water from palak and set aside.
3- In a blender add boiled palak, moong daal, ginger, and green chilies, water blend all ingredients together and make a mixture.
Directions for chicken cheese toppings:
1- In a bowl add chicken, onion, tomatoes, sweet corn, red chili powder, chaat masala, salt, white pepper, black pepper, and cheddar cheese, and mix it well.
2- You chicken cheese mixture is ready.
Directions for Palak cakes:
3. In a non-stick pan pour palak mixture, now add chicken cheese toppings layer upon it, and cook both sides properly for 2-3 mins.
4. Your palak pancakes are ready. Set aside.
Directions for Mayo sauce:
5. In a bowl add mayo, sriracha sauce, tabasco sauce , and mustard paste, and mix it well.
6. Your mayo sauce is ready. Serve with Palak Cakes and enjoy.
