Chicken Salad

When making chicken salad, I have to say, that seasoning your chicken well or using a rotisserie chicken is going to give you the best tasting chicken salad ever.

Using a rotisserie will also save you time, and the flavor is amazing. Just remember to use or add the chicken after it's been chilled.


Ingredients:
2 cups cooked chicken breast, chopped into bite size pieces
1 stalk of celery, about 1/2 cup, super fine dice
1 green onion, super fine dice
1/4 cup raw cashews, chopped
1 Tbs. fresh parsley, chopped
25 - 30 grapes, cut in half
1/4 cup low fat mayonnaise
1/4 cup plain Greek yogurt
avocado slices
1 tsp. lemon juice
1/4 tsp or more of garlic powder
salt and pepper to taste

Serve either on a bed of baby romaine lettuce or on a sour dough sandwich roll.

Directions:

This is so easy. Combine the mayonnaise, yogurt, cashews, lemon juice, salt, pepper, and garlic powder in a bowl and whisk to combine.

Add the chicken, celery, onion, and parsley and stir until everything is coated. Add the grapes and stir in gently.

Do one last taste test and add salt, pepper, lemon or garlic powder if needed.

Serve over a bed of greens or on your favorite bread.
