Ingredients:
1. Basmati rice – 350 gms
2. Water - 5 cups
3. Chicken-350 gms
4. Turmeric Powder-1/2 tbsp
5. Red Chilli Powder-2 tbsp
6. Black stone flower
7. Mace
8. Nutmeg
9. Cinnamon sticks-4
10. Cardamom-6
11. Fennel seeds-1 tbsp
12. Cloves-6
13. Green Chilli paste-2 tbsp
14. Fresh mint
15. Fried onions- 6
16. Ginger Garlic paste-1.5 tbsp
17. Lemon Juice- tbsp.
18. Semi thick Curd-200 ml
19. Coconut milk-100 ml
20. Oil/Ghee-5 tbsp
21. Raising and Cashew: 2 tbsp
22. Salt-2 tbsp

Instructions
Chicken Marinade
1. Wash and dry the chicken pieces.
2. Dry roast all the whole masala in skillet
3. Grind all the whole spices in mortar and pestle to make a fine powder
4. In a large bowl, mix chicken with the dry spices, turmeric and chilli powder
5. Add all the wet ingredients and mix together
6. Mix the fried onions and salt in this chicken marinade
7. Rest for 60 to 90 minutes

Rice Preparation
1. Soak rice in water for 30 minutes
2. Boil 2 liters of water with salt and semi cook the rice (not fully)
3. Strain the water immediately

Biryani Preparation
1. In an earthen pot, add 1 tbsp of ghee and place chicken pieces with the marinade
2. Assemble rice on top
3. Add in dry fruits
4. Put chopped mint and fried onion
5. Cover the pot with banana leaf
6. Seal the pot with dough
7. Put on high flame for 12 minutes and then on simmer for 8 minutes
8. Let it rest for 20-25 minutes
9. Open and serve hot.
