Your bananas are looking a little overripe. Oh well, time to throw them away. Not so fast! Julie shows us they are the perfect base for nutty, chocolatey banana bread. Waistlines be damned. Recipe below!Ingredients2 ¼ cup flour1 tsp baking powder¼ tsp baking soda3 large ripe bananas, mashed5 tbsp smooth peanut butter2 eggs, whisked½ cup vegetable oil1 cup firmly packed brown sugar2 tsp vanilla2/3 cup chopped dark chocolate½ cup chopped unsalted peanutsSteps1.) Preheat oven to 350˚F. Lightly grease and flour a loaf tin. Whisk together the flour, baking powder and baking soda in a large bowl.2.) In a separate bowl put the mashed bananas, peanut butter, egg oil, sugar and vanilla and stir with a fork. Add the banana mixture to the flour mixture and stir together until just combined. Fold in the chopped chocolate and peanuts reserving some for the top.3.) Pour into prepared tin and smooth the top before sprinkling with more chocolate and peanuts. Bake for 50-60 minutes or until a skewer comes out clean.
