DALIA PULAO

Ingredients

1 cup broken wheat (jada dalia)
2 tbsps ghee
½ tsp cumin seeds
3 cloves
5-6 black peppercorns
2 green cardamoms
1 bay leaf
1 large onion, sliced
½ tsp turmeric powder
Salt to taste
1 small carrot, cut into small diamonds
10-12 cauliflower florets
3-4 french beans, diagonally cut into 1 inch pieces
¼ cup green peas
Fresh coriander sprig for garnish
Raita to serve

Method

1. Heat ghee in a pressure cooker, add cumin seeds, cloves, black peppercorns, green cardamoms and bay leaf and cook till fragrant.
2. Add onion and sauté for 1-2 minutes. Add broken wheat and sauté for 5-6 minutes on medium heat.
3. Add turmeric powder, salt, carrot, cauliflower, French beans and green peas and mix well. Add 2½ cups hot water and mix well. Cover and cook under pressure till 4-5 whistles are released.
4. Open the lid of the cooker once the pressure reduces completely. Transfer onto a serving plate and garnish with fresh coriander sprig.
5. Serve hot with raita.
