DAL VADAIngredients2 cups split Bengal gram (chana dal), soaked for 3-4 hours Oil for deep-frying 1-2 green chillies8-10 curry leaves1 medium onion½ inch ginger4-5 fresh coriander sprigsSalt to taste Lemon wedges for servingGreen coconut chutney for servingFresh coriander leaves for garnishingMethod1. Heat sufficient oil in a kadai. 2. Coarsely grind drained split Bengal gram alongwith broken green chillies and curry leaves. Transfer in a bowl.3. Finely chop onion, ginger and coriander sprigs. Add to ground split Bengal gram mixture alongwith salt and mix well.4. Dampen your palms with some water, divide the split Bengal gram into equal portions, shape into balls and slightly flatten between yours palms to shape into vadas.5. Put the vadas in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper. 6. Line a piece of banana leaf on one side a serving platter and place the dal vadas on top. Place some green coconut chutney and lemon wedges on the other side and serve hot garnished with coriander leaves.
