Puran Poli Roti

Ingredients for Dough (Poli):
Wheat flour 2 cups
All-purpose flour 1 cup
Turmeric powder 1/2 tsp
Salt 1/2 tsp
Water as required
Oil 1 tbsp

Ingredients for Sweet filling (Puran):
Split chickpeas 1 cup
Water (for soaking) as required
Water (for boiling) 4 cups
Salt 1/2 tsp
Red chili powder 1 tsp
Oil 1 tbsp
Jaggery 1 cup
Cardamom powder 1/2 tsp
Nutmeg powder a pinch

Ingredients for Puran Poli Roti:
Prepared dough (Poli)
Prepared sweet filling (Puran)
Ghee as required

Directions for Dough (Poli) Preparation:
1. In a bowl add wheat flour, all-purpose flour, turmeric powder and salt. Mix it well. Now add water and knead a smooth dough now add oil and knead it again. (It will make the dough becomes soft). Grease with oil and let it rest for 30 mins.
Directions for Sweet Filling (Puran) Preparation:
2. In a bowl add chana daal, water and soak it for 2 hours.
3. In a deep pan heat water, soaked daal, red chili powder, salt and oil and boil it for 5-10 mins. Now cover and cook until dal gets fully done. take off the lid and skim off the scum. strain the water and leave it for 30 mins.
4. Now in a preheated pan add boiled daal, jaggery and mix it well. Cook it until the jaggery melts.
5. Mash daal with a spatula while cooking. Cook until the moisture dries out and dal is fully mashed.
6. Now remove the pan and let it cool down then transfer it to a chopper. Add cardamom powder, nutmeg powder and blend it well.
7. Now filter this mixture through a sieve into a bowl and knead it into a ball shape.
8. Now take the dough and sweet filling mixtyre. Make small dough balls of dough and sweet filling.
9. Flatten the dough ball in the palm of your hand and place sweet filling ball on it. Wrap the dough around it making a larger dough ball.
10. Now roll it out with a rolling pin into flat circle.
11. Now put it on a preheated griddle and both sides until it golden in color. Apply ghee on each side and cook until roti is puffed and fully cooked.
12. Your Puran Poli Roti is ready. Serve it with ghee and cream and tea.
