: Dak-hanmari (Korean chicken stew) Honeykki

Todays menu is dak-hanmari, Korean chicken stew.
Its so hot these days, and I seem to have lost my appetite and energy to do anything.
I thought I should eat anything that could energize me, so I prepared dak-hanmari.

I used half of a mid-sized chicken, which was perfect for one.
You can boil the remaining half, completely cool and refrigerate it.

Dak-hanmari means one whole chicken, and its literally a whole chicken stew cooked in a large pot, served with a sauce.
There are famous restaurants in Dongdaemun and Gongneung-dong.
There are similar dishes in Korean cuisine, such as samgyetang and baeksuk.
They may seem or sound similar, but they are cooked a bit differently.

A whole chicken, green onion, 1 ginger, 3~4 whole cloves garlic, whole black pepper (*optional), tteokbokki tteok(rice cake for tteokbokki), potato (*optional)

Sauce: 3Tbs red pepper powder, 2Tbs soy sauce, 1Tbs chopped garlic, 1Tbs sugar, 1Tbs corn syrup (half if using honey), 1Tbs vinegar, 1tsp mustard

Garnish with the sauce: Korean chives and cabbage, 1/2Tbs chopped garlic(*optional)
Kalguksu noodles, kimchi


* Recipe

1. Mix all the sauce ingredients and refrigerate in a fridge.
It is best left for a whole day; I recommend to make this at least one hour ahead.

2. Trim off unwanted fat and the tips of the wings.
I cut my chicken in half, but you can cut them into more pieces.

3. In a pot, add chicken, green onion, whole garlic cloves and whole black peppers and boil for 20min.
You can get rid of the meat odor by adding some rice wine to the boil. I didnt have rice wine, so I used cup mirin (Asian cooking wine).

4. In another pot, cut the chicken into serving size and bring to a boil with broth, green onion and tteokbokki-tteok.

5. In a dish, add and mix 1tbsp sauce, chopped garlic and chicken broth. Then, also add and mix Korean chives and cabbage.

6. When the chicken is cooked through, serve and enjoy with the sauce.

When finished eating the chicken, add and cook kimchi and kalguksu noodles in the broth.
Usually the real complete course includes rice porridge after the noodles, but I was too full to go on.
