Dairy Free Spinach Soup | Cooksmart | Sanjeev Kapoor Khazana

Like the name suggests, this spinach soup has no dairy product

DAIRY FREE SPINACH SOUP

Ingredients

1 medium bunch spinach
2 medium onions
1 tbsp oil
1 tbsp finely chopped garlic
2 medium potatoes
½ cup brown rice, soaked in 2 cups of water
1 cup soya milk
Salt to taste
1 tsp black pepper powder + for sprinkling
A few thin strips of red capsicum, for garnishing

Method

1. Heat 1 cup water in a deep non-stick pan, add spinach and cook.
2. Quarter onions.
3. Heat oil in another non-stick pan, add garlic and onions and sauté for a minute. Cut potatoes in big cubes and add to the second pan.
4. Add brown rice with the water in which it was soaked and cook till brown rice and potatoes are done. Switch off the heat.
5. Add the brown rice mixture to the spinach mixture and mix well.
6. Switch off the heat, strain, cool and grind with soya milk to a smooth puree.
7. Heat this puree in another deep non-stick pan. Add salt and pepper powder and mix well. Cook for 2-3 minutes.
8. Pour the soup into a soup bowl, sprinkle pepper powder, garnish with red capsicum strips and serve immediately.
