Daikon Radish Soup

Difficulty: Very Easy
Time: 30min
Number of servings: 4

Ingredients:
250~370g (upto13oz.) Daikon
1200ml Kombu Kelp Dashi (Vegan Dashi) *I recommend RIKEN Kombu Dashi Powder https://amzn.to/31o8bx8
1 clove grated garlic
1 long onion
1 tbsp. soy sauce
1/2 tbsp. salt
pepper
1 tbsp. sesame oil

Directions:
1. Slice Daikon into small pieces. Slice long onion into small pieces as well.
2. In a large pot, put Kombu Dashi (Vegan Dashi), grated garlic, and Daikon slices. Simmer for 15 minutes until soft.
3. Season with soy sauce, salt and pepper.
4. Add long onion slices and simmer for a few minutes. Add sesame oil to finish it off.
