Dahi Wale Aloo are potatoes cooked in a spicy yogurt gravy, its creamy texture and melt in your mouth potatoes stealing the show.DAHI WALE ALOO - (Serves - 4)Ingredients4 medium potatoes (aloo), boiled and peeled¼ cup yogurt (dahi)1 teaspoon red chilli powder¼ teaspoon turmeric powderA pinch sugarSalt to taste1 tablespoon oil 1 teaspoon cumin seeds (jeera)2 green chillies, roughly chopped¼ teaspoon asafoetida (hing)3-4 fresh coriander sprigs, chopped + for garnishingMethod1. Mash the potatoes in a bowl. Add chilli powder, turmeric powder, sugar and salt and mix well.2. Heat oil in a non-stick pan. Add cumin seeds and sauté till it changes colour. Add green chillies and asafoetida and sauté.3. Add mashed potato mixture and mix. Add ¾ cup water and mix well.4. Reduce heat, add chopped coriander sprigs, mix, cover and cook for 2-3 minutes. Remove the pan from heat and set aside for 5 minutes to cool.5. Add yogurt and mix well. 6. Serve hot garnished with a coriander sprig.
