DAHI BHINDI

Ingredients

¾ cup yogurt (dahi)
Salt to taste
¼ tsp turmeric powder
½ tsp red chilli powder
1½ tbsps Tata Sampann Fine Besan
2 tsps oil
¾ tsp cumin seeds
2 dried red chillies
20-25 lady fingers (bhindi), cut into 1 inch pieces
Freshly chopped coriander leaves for garnish

Method

1. In a bowl, add yogurt, salt, turmeric powder, red chilli powder, and Tata Sampann Fine Besan and whisk till smooth.
2. Heat oil in a wide pan, add cumin seeds and let them change colour. Break and add dried red chillies and sauté for a few seconds.
3. Add lady fingers and sauté on high heat. Sprinkle salt and continue to sauté for 1-2 minutes. Cook for 2-3 minutes, sautéing occasionally.
4. Add the prepared yogurt mixture and mix well. Cook for 2-3 minutes and take the pan off the heat.
5. Transfer the prepared dahi bhindi in a serving bowl and garnish with chopped coriander. Serve hot.
