An interesting way to present the popular recipe of dahi vada in shape of a pop held by satay sticks.DAHI BHALLE POPSIngredients1 cup chilled yogurt (dahi)1½ cups split black gram, soaked overnightOil for deep-frying1-2 green chillies, finely chopped½ inch ginger, finely chopped1½ teaspoons red chilli powder + for sprinklingSalt to taste1 tablespoon chopped fresh coriander leaves8-10 raisins6-8 cashewnuts1 tablespoon powdered sugar½ teaspoon roasted cumin powder + for sprinkling½ teaspoon black salt½ teaspoon chaat masala + for sprinklingGreen chutney as requiredSweet tamarind chutney as requiredFresh pomegranate pearls for garnishing Method1. Heat sufficient oil in a kadai.2. Grind drained black gram alongwith 3-4 tablespoons water to make a smooth thick mixture. Transfer in a bowl.3. Add green chillies, ginger, 1 teaspoon chilli powder, salt, chopped coriander, raisins, broken cashewnuts and mix well.4. Put in portions of prepared gram mixture in hot oil and deep-fry till golden and crisp. Place in a bowl of water and soak for 10 minutes or till it softens. These are bhalles.5. Combine yogurt, salt, powdered sugar, cumin powder, remaining chilli powder, black salt and chaat masala in another bowl and whisk well. 6. Fill green chutney and sweet tamarind chutney in individual squeezy bottles. 7. Drain the soaked bhalles and dip in prepared yogurt mixture and set aside for 5 minutes. Skewer each bhalle pops in 2-3 inch satay stick and place them on a plate8. Squeeze out some green chutney and sweet tamarind chutney on top. Sprinkle some chilli powder, cumin powder and chaat masala on top.9. Serve immediately garnished with some yogurt mixture, green chutney, sweet tamarind chutney and pomegranate pearls.
