Dahi Baingan Shirazi Chef Harpal Singh

A must try recipe, Baingan with Dahi (Eggplant or Brinjal with Yogurt). A lot of people don't like Baingan but you will change your mind after you try this.

Ingredient Quantity
Egg plant (Small) 5-6 no.
Oil 3-4 Tbsp
Butter 2 Tbsp
Cumin seeds 1 tsp
Cinnamon stick 1 inch
Ginger chopped 1 tbsp
Green chilli chopped 3 no.
Onion slice 2 no.
Paneer cut into cube size 100 gm.
Coriander chopped 2 tbsp
Assorted nuts chopped 1 tbsp
Dry Apricot chops 2 no.
Cumin powder tsp
Yogurt 1 Cup
Salt to taste

Method:
1. Cut the eggplant into quarters.
2. Heat oil in a pan; add eggplant and saut till eggplants are soft.
3. When eggplants are soft, Remove the excess oil in a bowl and place the egg plant in serving bowl.
4. Now heat butter and 1 tbsp of oil in a pan, add cumin seeds and cinnamon sticks, mix well and saut for 30 sec. or till cumin are brown.
5. Add chopped ginger and mix well.
6. Add green chilli chopped, mix well and saut for 30 sec.
7. Add onion slice, mix well and saut for 2 min.
8. Now remove onion and add to the eggplant, mash and mix well.
9. Add paneer, coriander and salt, mix well.
10. Add salt in yogurt and mix well.
11. Now pour yogurt all over the mixture.
12. Add assorted nuts and apricot, sprinkle cumin powder and garnish with coriander leaves and serve.
