Dabeli | Sanjeev Kapoor Khazana

Dabeli is a popular snack food of India, originating in the Kutch or Kachchh region of Gujarat. It is a spicy snack made by mixing boiled potatoes with a special dabeli masala, putting the mixture in a ladi pav (burger bun), and serving it with chutneys. Isnt it mouthy watering. 

DABELI - (Serves - 4)

Ingredients

3 medium potatoes, boiled, peeled and mashed
1 tablespoon dabeli masala
8 dabeli pav
1 tablespoon oil
1 medium onion, finely chopped
1 tablespoon red chilli-garlic paste
Salt to taste
1 teaspoon tamarind pulp
1 teaspoon sugar
1 tablespoon lemon juice
2 tablespoons scraped fresh coconut
2 tablespoons fresh pomegranate pearls + for garnishing
2 tablespoons spiced peanuts + for garnishing
1 tablespoon chopped fresh coriander leaves + for garnishing
Butter as required
¼ cup sev + for garnishing

Method

1. To prepare stuffing, heat oil in a non-stick pan. Add onion and sauté till translucent. Add red chilli-garlic paste and sauté for 1 minute.
2. Add dabeli masala and sauté for 1 minute. Add potatoes, mix and cook for 1-2 minutes. Add salt, tamarind pulp and sugar, mix and cook for 1 minute.
3. Add lemon juice, switch off heat and mix well. Transfer on a plate and spread evenly.
4. Spread coconut, 2 tablespoons pomegranate pearls, 2 tablespoons spiced peanuts and 1 tablespoon coriander leaves on top of stuffing.
5. Slit each pav from two adjacent sides and put some prepared stuffing in it.
6. Heat a non-stick tawa. Put some butter, place each dabeli and roast till golden brown from downside. Apply some butter on top, flip and roast till golden brown from downside.
7. Spread ¼ cup sev and coast the sides of dabeli with it and place on a serving platter.
8. Serve hot garnished with spiced peanuts, pomegranate pearls, sev and coriander leaves.
