But what is essential to make a good chaat, raita, kadhi, etc are good fresh curds. Preparation Time: 2 minutes. Cooking Time: 2 minutes. Makes: 2½ cups. ½ litre (2 ½ cups) full-fat milk1 tbsp curds (dahi)1. Pour the milk in a deep pan and boil on a medium flame for 1 to 2 minutes or till the milk is lukewarm, while stirring occasionally. Keep aside. 2. Spread the curds evenly at the bottom of a deep bowl.3. Pour the lukewarm milk and mix well.4. Cover with a lid and keep aside in a warm place for 4 hours or till the curds set. Refrigerate and use as required.
