A very popular south Indian dish which is not only delicious and easy to make but also very healthy as it aids digestion.

CURD RICE

Ingredients

1½ cups curd (dahi)
3 cups boiled kolam rice
2 tsps oil
1 tsp mustard seeds
1½ tsps split skinless black gram (urad dal)
1 tsp split Bengal gram (chana dal)
3-4 button dried red chillies
1-2 green chillies, chopped
1 inch ginger, finely chopped
6-8 curry leaves
Salt to taste
A pinch of asafoetida (hing)
¼ cup pomegranate pearls
10-12 green grapes, halved

Method

1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add split skinless black gram and Bengal gram and sauté till the gram turns golden brown.
2. Add dried red chillies and sauté for a few seconds. Add green chillies, ginger and curry leaves and mix well. Switch off the heat. Add a pinch of salt and mix well and allow the mixture to cool slightly.
3. Take rice in a large bowl, add salt and mix till the rice is mashed. Pour curd and mix till well combined.
4. Add the prepared tempering and mix well. Add pomegranate pearls and green grapes and mix well.
5. Transfer into a serving bowl, serve immediately.
