CUCUMBER PACHDIIngredients 3 small cucumbers, peeled 1 cup yogurt 2 tablespoons scraped fresh coconut inch ginger, finely chopped2-3 green chillies, finely chopped Salt to taste1 teaspoon oil teaspoon mustard seeds 5-6 curry leaves 2 dried red chillies, broken Method1. Grate the cucumber on a plate.2. Grind together coconut, ginger, green chillies, and 2 tablespoons water to a fine paste.3. Mix together cucumber, ground paste, and yogurt in a bowl. Add salt and mix.4. Heat oil in a small non-stick pan, add mustard seeds. When they start to splutter, add curry leaves, dried red chillies and saut for a few seconds. Pour it over the yogurt mixture and mix till well combined.5.
