Cucumber Mint Shots | Sanjeev Kapoor Khazana

Refreshing chilled cucumber and mint shots will leave you asking for more.

CUCUMBER MINT SHOTS

Ingredients

2 medium cucumbers, deseeded and roughly chopped
20-25 fresh mint leaves + for garnishing
½ cup thick yogurt
¼ cup fresh cream + for drizzling
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
Black pepper powder to taste
Salt to taste
1 tablespoon lemon juice
8-10 ice cubes
4 chives, blanched

Method

1. Blend together cucumber reserving some, yogurt, cream, mint leaves, parsley, chives reserving some, pepper powder, salt and ice cubes till smooth.
2. Place some of the reserved cucumbers and blanched chives in individual shot glasses. Pour some of the ground mixture in it and serve chilled. Garnish with mint leaves. OR
3. To serve as soup, pour reserved ground mixture in a soup plate, drizzle some of the cream on top, sprinkle black pepper powder. Garnish with mint leaf and serve chilled.
