Chicken Pesto Sandwich is a shredded chicken salad mixture with homemade pesto, served with mozzarella, tomato, and spinach on a crispy roll.CRUNCHY PESTO CHICKEN SANDWICH Ingredients8 brown bread slices Pesto as required 4 boneless chicken breasts Salt to tasteCrushed black peppercorns to taste3 tablespoons oil Dried white breadcrumbs for coatingButter as required 8 cheese slices Fried potato wedges for serving Method1. Butterfly the chicken breasts and cover with an aluminium foil. Flatten with the help of a rolling pin.2. Heat oil in a non-stick pan. 3. Season the flattened chicken with salt and crushed peppercorns and separate the pieces. 4. Rub the pesto all over the chicken and coat with breadcrumbs, transfer in the pan and pan-sear till evenly cooked from both the sides. 5. Apply butter on bread slices and toast them till golden brown from both sides. 6. Halve the cooked chicken. 7. To make one sandwich, place a cheese slice on a toasted bread slice. Top with a cooked chicken half, another cheese slice and one more chicken half. Cover with a toasted bread slice. 8. Cut into triangles and serve immediately with potato wedges.
