A delicious mixture of semolina and a selection of vegetables combined together and deep fried to perfect crispiness.

CRISPY SOOJI PAKODE

Ingredients

1½ cups semolina (rawa)
Salt to taste
3 tbsps chopped fresh coriander leaves
1 green chilli, chopped
1 medium carrot, grated
1 tbsp finely chopped green capsicum
1 tbsp finely chopped yellow capsicum
1 tbsp finely chopped red capsicum
3 tbsps yogurt
A pinch of baking soda
1½ tbsps rice flour
Oil for deep frying
Green chutney to serve
Chai to serve

Method

1. Take semolina in a large bowl, add salt, coriander leaves, green chilli, carrot, green capsicum, yellow capsicum and red capsicum and mix.
2. Add yogurt and mix and add ½ cup water and mix well. Set aside for 10 minutes.
3. Add baking soda and rice flour and mix.
4. Heat sufficient oil in a kadai, slide in small portions of the mixture and deep fry till golden brown and crisp. Drain on absorbent paper.
5. Arrange the pakodas on a serving plate and serve hot with green chutney and chai.
