A delicious mixture of semolina and a selection of vegetables combined together and deep fried to perfect crispiness.CRISPY SOOJI PAKODEIngredients1½ cups semolina (rawa)Salt to taste3 tbsps chopped fresh coriander leaves1 green chilli, chopped1 medium carrot, grated1 tbsp finely chopped green capsicum1 tbsp finely chopped yellow capsicum1 tbsp finely chopped red capsicum3 tbsps yogurtA pinch of baking soda1½ tbsps rice flourOil for deep fryingGreen chutney to serveChai to serveMethod1. Take semolina in a large bowl, add salt, coriander leaves, green chilli, carrot, green capsicum, yellow capsicum and red capsicum and mix. 2. Add yogurt and mix and add ½ cup water and mix well. Set aside for 10 minutes.3. Add baking soda and rice flour and mix.4. Heat sufficient oil in a kadai, slide in small portions of the mixture and deep fry till golden brown and crisp. Drain on absorbent paper.5.
